Easy Herbed Cucumber Salad

I don’t know about you, but I have cucumbers coming out of my ears this year. Not only are they producing profusely in my garden, but every week they arrive in our CSA box as well. And trust me, I’m not complaining! I love slicing fresh cucumbers and dipping them in hummus or running them through the juicer with carrots, apples, lemon, and celery. But after a while, you just need something new.

It also helps to have fresh, chilled salads on hand during the summer to pull out and eat without heating up the kitchen. This Easy Herbed Cucumber Salad does just the trick.

Fresh herbs are the magic ingredients here. Buy potted herbs and keep them on your back deck or in your kitchen window. Way more cost effective!

Mint Lime

Update: It’s come to my attention from a lovely reader that you may not be familiar with coconut sugar. It’s my favorite natural sweetener to use in place of granulated refined sugar (or especially brown sugar, as the flavor profile is similar). Coconut sugar is rich in nutrients as it comes from the – wait for it – coconut plant and it won’t spike your blood sugar levels like regular white sugar. It’s still a sweetener, so don’t go crazy with it. But it’s definitely a better option! Find it online here.

Easy Herbed Cucumber Salad

Ingredients

  • 1-2 medium cucumbers, sliced & quartered
  • 1/4 c. olive oil
  • Juice of 1 lime
  • 1 tsp. coconut sugar
  • 1/4 - 1/2 c. fresh herbs, packed (I used mint, lime basil, & traditional basil)
  • sea salt & freshly ground black pepper

Instructions

  1. Combine all ingredients in a bowl. Let sit in refrigerator at least an hour before serving.

    What is coconut sugar? I wouldn’t even know where to find that. Could I use something as a substitute? :-)

      Sorry about that! Coconut sugar is my absolute favorite natural sweetener. It comes from the palm/coconut plant and is rich in nutrients while still being low on the glycemic index (i.e. it won’t wreak havoc on our body like refined sugar will).
