Plum & Thyme Iced Tea

Scorching hot summer weather calls for a cold glass of tea or lemonade. Last week I shared an incredibly easy and healthy recipe for Strawberry Lemonade. A few weeks before that, it was Rosemary Lemonade. Today, I’m shifting gears slightly and looking at iced tea. Iced tea with plums and thyme, to be exact.

Plum & Thyme Iced Tea

I love the combination of sweet and savory, so when I first came across a version of this recipe I knew I had to try it! You can use either (caffeinated) black tea or (herbal) rooibos tea. Either way, you’re loading up on antioxidants.

I have thyme growing in a pot on my back deck. It’s an herb that is rather drought resistant, so even if you have a black thumb, you really should give thyme a try. You’ll save so much money not having to buy expensive pre-packaged fresh herbs!

Plum & Thyme Iced Tea

Ingredients:

2 tea bags (black or herbal)
2 Tbsp. raw honey
2 plums, sliced
8 sprigs of fresh thyme
3 c. filtered water

Directions:

Bring the 3 cups of water to a boil in a saucepan. Remove pan from heat, add tea bags, sliced plums, and thyme sprigs, then cover and let steep for 10 minutes.

Remove your tea bags to the compost pile, then stir in honey. Leave the tea in the pan or transfer to a pitcher and refrigerate for at least 1  1/2 hours.

Pour over ice and garnish with plum slices and thyme sprigs.

If you don’t end up eating the plum slices, you can also use them in a Plum Thyme Crisp, following all the directions for my Cranberry Apple Crisp, but substituting the tea and thyme soaked plums. Serve it up with some homemade vanilla ice cream or whipped cream on the side and try not to eat it all yourself!
