Street Food: Ethiopian Lentil Wat

Let it be known this was the first time I’ve ever cooked with lentils.

I know, I know…..what kind of health nut are you?

Just goes to show that I’m not as crazy as people might think. (Or, maybe I am. It’s definitely debatable.)

At any rate, when my sweet husband bought me this Street Food cookbook for my birthday, this was one of the first recipes I tried.

It doesn’t look a thing like the picture in the book, but I figured rarely do they ever. It tasted amazing though!

Lentils=a success.

I had to do a bit of research on them since this was my first introduction. Here’s what I found:

Lentils come in quite a few varieties, but they are all a great source of inexpensive protein, and high in iron, B-vitamins, and fiber (which helps control blood sugar levels).

Want to make your own? Here’s the recipe:

  • 1 c. lentils
  • 1-2 onions, chopped
  • 3 cloves garlic, chopped
  • 1 tsp. chili powder
  • 1 tsp. fresh ginger, grated
  • 3 cloves
  • 1/2 tsp. nutmeg
  • juice of 1/2 lemon
  • 1 Tbsp. cilantro or parsley
  • sea salt & pepper
  • 1 Tbsp. coconut oil

Put the lentils in a saucepan with enough water to cover, and bring to a boil. Skim off any froth with a spoon, then reduce heat to low, cover, and simmer for 15-20 min.

Meanwhile, heat the coconut oil in a pan and saute the onions & garlic. Next, add the chili powder, ginger, cloves, nutmeg & lemon juice.

Spoon cooked lentils into the spice mix and stir to combine. Cook over low heat for 5-10 min. to let the flavors expand, stirring frequently. Garnish with cilantro or parsley.
