My New Favorite Cookies

I have a little love affair going on with these cookies (just don’t tell the lima beans I’m cheating on them….)

They are wheat-free and gluten-free but certainly not taste free.

Ladies and Gentlemen, I present Banana Coconut Chocolate Chip Cookies!

I found the recipe in a great new book called Clean Food by Terry Walters then modified it a bit.

2 bananas, mashed
1/4 c. grapeseed oil
1/4 c. maple syrup
1/2 tsp. vanilla extract
2/3 c. flax meal
2/3 c. brown rice flour
1/4 tsp. baking soda
1/2 c. shredded unsweetened dried coconut
pinch of sea salt
1/4 c. dark chocolate chips

Combine bananas, oil, syrup and vanilla in a medium bowl (I used a blender). In a separate bowl, combine flax, flour, soda, coconut & salt. Add banana mixture to the dry ingredients and blend until just combined. Fold in chocolate chips.

Drop batter by teaspoonful onto a cookie sheet. No need to roll or flatten. Bake 14 min. at 350 or until lightly browned.

Makes 1 1/2 dozen cookies

    these look great! I am wondering where to get certain things though, like the flax meal, brown rice flour, and shredded unsweetened dried coconut. I'll have to be on the lookout for them.

    The flax meal I believe came from Costco (though I know there is no Costco in Jackson. Biggest travesty ever). You can probably find Bob's Red Mill brand in the organic section at Kroger. Same goes with the Brown Rice Flour and coconut.
    If you ever do travel to Memphis or Nashville you can stock up on things like that from Whole Foods. I get mine from the bulk bin section. It's a bit cheaper that way :)
