Green Pancakes!

I’ve become a bit more of an experimenter in the kitchen these days.

To satisfy my craving for pancakes the other night, while understanding that I really needed to eat some vegetables, I ended up with Green Pancakes.

Now, let it be known that I don’t make very pretty shaped pancakes. Never have and probably never will.

 

Perhaps you can make perfectly round and pleasant pancakes with my recipe:

1 c. Bob’s Red Mill Gluten-free Pancake Mix
2 eggs
3/4 c. coconut milk
1 banana
1 1/2 Tbsp. butter
1 Tbsp. agave nectar or honey
Small handful of baby spinach leaves

Put all ingredients (except the pancake mix) into a blender and mix until thoroughly combined. Stir the wonderfully green goop into the pancake mix.

Not even kidding–these pancakes were soooo good! The sweetness of the banana masked any leafy flavor.

Just add a touch of maple syrup! (Trader Joe’s has the best price on All Natural Grade B maple syrup. Comes in a wine bottle to boot.)

So now that are either thoroughly repulsed or extremely intrigued, try them out and let me know what you think of them!

(And please let me know if you have a better name for these puppies than Green Pancakes. Surely someone out there has some ideas.)

    Wow, I never would have thought of adding spinach to pancakes. I wonder if this would go over well with kids like green ketchup.

    You could call it Popeye's Breakfast. Or with a couple strategically placed blueberries, Alien Pancakes.
